Tuna Medley Recipe
- 1/2 pound cheddar cheese, cubed
- 1 (4 ounce.) jar pimientos
- 8 ounce. fine noodles, cooked
- 3 hard boiled Large eggs, minced
- 2 (7 ounce.) cans tuna in water
- 1 1/2 c. sliced mushrooms
- 1 tbsp. butter
- Salt & pepper to taste
- Prepare first 4 ingredients and set aside.
- Flake tuna into bite size pcs, reserving juice.
- Saute/fry mushrooms in butter for 5 min; add in pimientos and saute/fry another 2 min.
- Set aside while making white sauce.
- Heat butter in saucepan.
- Add in flour and stir 3 to 4 min.
- Add in lowfat milk, use whisk to blend till thickened.
- Add in bouillon and lemon juice.
- Taste for salt and pepper.
- Remove from heat.
- Mix in other ingredients including tuna water.
- Pour in buttered casserole.
- Heat in 350 degree oven for 30 min or possibly warm and bubbly.
