Easy Feta Tuna over Spinach Fettuccine
- 8 ounces spinach fettuccine or 8 ounces green noodles
- 12 cup green onion, sliced
- 3 tablespoons butter or 3 tablespoons margarine
- 3 tablespoons all-purpose flour
- 2 cups milk
- 6 12 ounces canned tuna, drained and broken into chunks
- 4 ounces feta cheese, crumbled (1 cup)
- 12 cup sliced ripe olives
- Cook fettuccine or noodles according to package directions.
- Drain well; keep fettuccine warm by placing in colander over a pot of warm water and cover.
- Meanwhile, in a medium saucepan cook onion in butter or margarine until tender but not brown.
- Stir in flour.
- Add milk all at once.
- Cook and stir over medium heat until thickened and bubbly.
- Cook and stir for 1 minute more.
- Gently stir in tuna and 1/4 cup of the cheese.
- Spoon tuna mixture over the hot cooked fettucine or noodles.
- Sprinkle with remaining cheese and olives.
- Serve immediately.
