Low-Fat Spaghetti or Fettuccine Carbonara
- 1 (8 ounce) package spaghetti or 1 (8 ounce) package fettuccine pasta
- 2 (4 ounce) cartons egg substitute
- 12 cup shredded low-fat swiss cheese
- 1 ounce grated parmesan cheese
- 2 tablespoons chopped fresh chives
- 12 tablespoon chopped fresh parsley (Italian kind preferred)
- 12 tablespoon chopped fresh oregano
- 1 tablespoon unsalted butter
- 2 ounces thinly sliced turkey ham, cut in julienne strips
- 1 shallot, finely chopped
- 1 teaspoon pepper
- Cook pasta according to package directions; drain.
- In a bowl, whisk together the first five ingredients (egg substitute through parsley.
- In a skillet, stir-fry ham and shallot 1-2 minutes over medium heat until shallot is soft and translucent.
- Add pasta to the skillet and pour in the egg mixture; continue cooking, while tossing continuously, about 2-3 minutes until the sauce thickens enough to coat the pasta.
- Season with pepper and serve.
