Berry Sauce Recipe
- 2 c. Strawberries, fresh
- 1/3 c. Sugar
- 1 Tbsp. Lemon juice
- 1/4 tsp Lemon rind
- 2 tsp Cornstarch
- 2 Tbsp. Cognac
- Sauce for fruit or possibly ice cream.
- Yields about 1 1/2 c. for standard serving size.
- Blueberries may be used instead of strawberries.
- Cook berries in sugar (more if fresh) just till warm.
- Add in lemon juice, grated lemon rind and simmer 5 min.
- Force through a sieve.
- Mix together cornstarch and cognac until smooth; Add in berry mix and cook over low heat, stirring constantly till it is clear and thickened.
- Sauce may be served warm or possibly cool.
- Serve over fruit or possibly ice cream.
