lighter Cocoa Roll out Cookies
- 14 cup Smart Balance butter spread
- 14 cup nonfat vanilla yogurt
- 12 cup sugar
- 2 egg whites
- 1 teaspoon vanilla
- 1 12 cups all-purpose flour
- 13 cup cocoa
- 12 teaspoon baking powder
- 14 teaspoon salt
- Cream melted butter, yogurt and sugar in a large bowl.
- Add egg whites and vanilla.
- Stir well.
- In a seperate bowl mix flour, cocoa, baking powder and salt.
- Add flour mixture to butter mixture.
- Mix well -- it may seem tough.it will be OK.
- Put cookie dough in a big ball and refridgerate for 2 hours in plastic wrap.
- Flour counter, seperate ball into 2 and roll dough out.
- Using small cookie cutters, cut out shapes and place on cookie sheet coated w/ cooking spray.
- Bake 5-7 minutes Under cook if you want it "fudgy".
