Black Beans and Corn
- 15 ounces black beans, drained and rinsed
- 1 12 cups frozen corn (I used a 10 oz box)
- 12 cup chopped green bell pepper
- 12 cup chopped red bell pepper
- 12 cup chopped onion
- 14 cup pickled jalapeno pepper, slices
- 1 cup picante sauce
- 2 tablespoons extra virgin olive oil
- Preheat oven to 350F.
- Place oil in pan and saute onions for 4 minutes or until tender.
- Add all of your peppers and saute for 3 minutes or until tender.
- Add the rest of the ingredients and stir until well mixed and heat through.
- Serve with tortillas, rice or as a side dish for chicken.
- Enjoy!
