Microwave Baked Cheesy Potatoes with Broccoli

  1. Prick potatoes in several places with tip of sharp knife.
  2. Place on microwaveable plate.
  3. Microwave on HIGH 10 to 12 min.
  4. or until tender, turning potatoes over after 6 min.
  5. Remove from microwave; set aside.
  6. Place broccoli and water in medium microwaveable bowl; cover loosely.
  7. Microwave on HIGH 3 to 4 min.
  8. or until crisp-tender; drain.
  9. Cut each potato lengthwise in half; scoop out potatoes, leaving 1/4-inch shell.
  10. Add potato pulp to broccoli along with the sour cream and pepper; mix well.
  11. Stuff broccoli mixture into potato shells.
  12. Top each with 2% Milk Singles.
  13. Place stuffed potatoes on microwaveable plate.
  14. Microwave on HIGH 2 min.
  15. or until Singles are melted and potatoes are hot.
