Clam Sauce with Angel Hair Pasta Recipe

  1. Boil large pot of salted water and add angel hair and cook until al dente 7-8 minutes.
  2. Drain, rinse and set aside.
  3. In a medium heavy saute pan, heat oil over medium heat.
  4. Add pancetta and cook until slightly crisped and brown.
  5. Add onions and cook stirring for 2 minutes.
  6. Add garlic and continue cooking until mixture is slightly brown.
  7. Add wine simmer for 10 minutes.
  8. Add clams with juice & red pepper and simmer for 5 min.
  9. Slowly stir in cream.
  10. Add 1/2 of the cilantro, chives (save a little for garnish), lemon, salt & pepper to taste & simmer for 2 minutes.
  11. Stir in corn starch slurry mix and allow to thicken a bit for a minute.
  12. Add the cooked pasta and rest of the cilantro and toss to coat.
  13. Plate pasta onto plates, top with parmesan cheese and sprinkle some chives.
