Low histamine zucchini cake
- 2 medium zucchini
- 1 tsp salt
- 2 chopped onion
- 2 garlic cloves
- 1 egg
- 1 tsp baking powder
- 1/2 cup cornflour
- 1 olive oil or rapeseeds oil for cooking
- 1 tsp basil
- 125 ml white yoghurt
- 50 grams chopped cucumber
- 1/2 tsp sweet paprika
- pinch ground black pepper
- 1/2 tsp dried garlic
- pinch salt
- Grate the zucchini on large-scale grater
- Put in a bowl and toss in the salt.leave it for 10 minutes and then extract excess water from zucchini
- Return the zucchini into a bowl and combine with onion,garlic,egg,cornflour,baking powder and basil
- Mix everything together and form cakes of about 3cm in diameter out of the mixture
- Fry until cakes turn into medium-brown colour
