Roasted Potatoes and Red Peppers

  1. Preheat oven to 375F.
  2. In a large mixing bowl, combine all ingredients.
  3. Line broiler pan with lightly oiled aluminum foil.
  4. Distribute potato mixture evenly in pan.
  5. Bake 1 hour, stirring gently once or twice during baking.
