Cream of Cucumber Soup
- 4 romaine leaves, chopped
- 1 cucumber (peeled, seeded, chopped)
- 12 cup water
- 12 cup lemon juice
- 12 teaspoon garlic (crushed)
- 14 teaspoon salt
- 12 avocado
- 1 tablespoon olive oil
- 1 tablespoon fresh dill (1 tsp. if dried) or 1 tablespoon mint (1 tsp. if dried) or 1 tablespoon cilantro (1 tsp. if dried)
- Add everything through salt to blender or food processor until smooth.
- Add avocado and oil until smooth.
- Add herbs.
- If smooth is too soupy, don't blend so much.
- If avocado or oil or juice is too many calories, don't add so much.
- If you need more protein, add your powder to THIS instead of to water.
