Vegetable Stew
- 2 cups vegetable juice (V-8)
- 2 tomatoes, quartered
- 1 medium zucchini, sliced into 1/2 inch thick rounds
- 1 cup sugar snap pea
- 1 cup frozen corn
- 2 stalks celery, sliced
- salt
- 1 small onion, sliced
- Combine all ingredients in a 5-quart saucepan and bring to a boil over medium-high heat.
- Reduce heat, cover, and simmer 10 minutes or until vegetables are tender.
