Sloppy Joes for 100
- 20 lb. ground beef
- 4 lg. onions, chopped
- 4 lg. green bell peppers, chopped
- 4 cups chopped celery
- 1 cup brown sugar, packed
- 1 cup spicy brown mustard
- 4 cups ketchup
- 2 cans (12 oz. each) tomato paste
- 4 cans (15 oz. each) tomato sauce
- 1 cup vinegar
- 2/3 cup Worcestershire sauce
- 100 hamburger buns
- In a large Dutch oven or pan, brown the beef, onions, peppers and celery in batches until meat is browned.
- Remove mixture with a slotted spoon to a large roasting pan.
- Discard fat.
- Stir together the sugar, mustard, ketchup, tomato paste,tomato sauce, 6 cups water, vinegar and Worcestershire sauce.
- Stir into meat mixture.
- If too thick, add up to 2 cups more water.
- Cover and simmer for 3 to 4 hours, stirring occasionally.
- Serve on the buns.
