Apricot Glazed Pork Chops
- 4 Pork rib
- loin chops, 1/2-inch thick
- 1 tsp. salt
- 1 tbsp. oil
- shortening
- 1 can (1 lb.) apricot halves, drained, reserving liquid
- 1-1/2 cup reserved apricot liquid plus water to equal
- 2 tbsp. cornstarch
- 2 tsp. lemon juice
- 2 tbsp. slivered almonds
- Sprinkle chops with salt.
- Brown in oil on both sides in frying pan.
- Add 1/2 c of the apricot liquid.
- Cover, reduce heat and simmer for 10 minutes.
- Combine cornstarch and remaining 1 c apricot liquid.
- Add to chops.
- Continue simmering, stirring frequently, until liquid thickens.
- Add apricots and almonds.
- Cover and continue simmering for 10 minutes.
