Apricot Glazed Pork Chops

  1. Sprinkle chops with salt.
  2. Brown in oil on both sides in frying pan.
  3. Add 1/2 c of the apricot liquid.
  4. Cover, reduce heat and simmer for 10 minutes.
  5. Combine cornstarch and remaining 1 c apricot liquid.
  6. Add to chops.
  7. Continue simmering, stirring frequently, until liquid thickens.
  8. Add apricots and almonds.
  9. Cover and continue simmering for 10 minutes.
