Crispy Oven-Fried Onion Rings
- 2 medium yellow onion
- 1 cup flour, all-purpose or whole wheat pastry flour
- 2 1/4 teaspoons baking powder
- 3 large eggs
- 2 cups bread crumbs finely dry, you can use white or whole wheat
- 1 1/2 tablespoon old bay seasoning or any other seasoning mix
- 1 x nonstick cooking spray
- 1 x salt optional
- Place racks in upper and lower thirds of oven.
- Coat 2 large rimmed baking sheets with cooking spray.
- Cut off both ends of onions and peel.
- Cut into 1/2 inch thick slices.
- Separate slices into rings.
- Put the rings in a big bowl, cover with cold water.
- Preheat oven to 450F.
- Mix well flour and baking powder in a shallow plate.
- Beat eggs lightly in another shallow bowl.
- Mix well breadcrumbs and seasoning in a third shallow plate.
- Working with one ring at once, remove the ring from the water, letting any excess drip off.
- Coat in flour, shaking off excess.
- Dip in eggs and let any excess drip off.
- Then coat in the breadcrumb mixture, shaking off any excess.
- Place on the prepared baking sheets.
- Then repeat it until finished.
- Generously coat the onion rings with cooking spray.
- Bake for 10 minutes.
- Turn over each onion ring and return sheets to the oven, switching the positions of the baking sheets.
- Go on baking until the onion rings are brown and very crispy, 6 to 8 minutes more.
- Cool slightly, seasoning with salt if desired, serve warm.
