Crispy Oven-Fried Onion Rings

  1. Place racks in upper and lower thirds of oven.
  2. Coat 2 large rimmed baking sheets with cooking spray.
  3. Cut off both ends of onions and peel.
  4. Cut into 1/2 inch thick slices.
  5. Separate slices into rings.
  6. Put the rings in a big bowl, cover with cold water.
  7. Preheat oven to 450F.
  8. Mix well flour and baking powder in a shallow plate.
  9. Beat eggs lightly in another shallow bowl.
  10. Mix well breadcrumbs and seasoning in a third shallow plate.
  11. Working with one ring at once, remove the ring from the water, letting any excess drip off.
  12. Coat in flour, shaking off excess.
  13. Dip in eggs and let any excess drip off.
  14. Then coat in the breadcrumb mixture, shaking off any excess.
  15. Place on the prepared baking sheets.
  16. Then repeat it until finished.
  17. Generously coat the onion rings with cooking spray.
  18. Bake for 10 minutes.
  19. Turn over each onion ring and return sheets to the oven, switching the positions of the baking sheets.
  20. Go on baking until the onion rings are brown and very crispy, 6 to 8 minutes more.
  21. Cool slightly, seasoning with salt if desired, serve warm.
