Mint Chocolate Truffle Cookies
- 1 pkg. (170 g) Baker's Bittersweet Chocolate, chopped
- 3/4 cup butter
- 1-1/4 cups sugar
- 2 eggs
- 1-3/4 cups flour
- 1/2 tsp. baking powder
- 1/3 cup chopped candy canes
- Heat oven to 350F.
- Microwave chocolate and butter in medium microwaveable bowl on MEDIUM 2 min.
- or until butter is melted; stir until chocolate is completely melted.
- Stir in sugar.
- Add eggs, 1 at a time, mixing well after each.
- Add combined flour and baking powder; mix well.
- (Dough will be very soft.)
- Refrigerate 2 hours.
- Roll heaping teaspoonfuls of dough into 1-inch balls.
- Place, 2-inches apart, on greased baking sheets.
- Bake 9 to 11 min.
- or until lightly browned.
- (Do not overbake.)
- Immediately sprinkle with chopped candy.
- Cool 3 min.
- on baking sheets; remove to wire racks.
- Cool completely.
