Sicilian Stew
- 2 can fire-roasted diced tomatoes
- 1 can diced tomatoes with peppers
- 1 can cannolinni beans
- 1/2 cup cooked rotisserie chicken or turkey
- 1 hot Italian sausage, cooked and sliced
- 1 tsp pesto
- 1/2 cup kale
- 1/2 tsp Red pepper flakes
- 1 1/2 cup chicken stock
- 1 tsp tomato paste
- 1 parmesan cheese
- 1 lemon zest
- 2 Marinated fire-roasted peppers and juice
- 6 clove garlic
- 1/2 cup chopped celery
- 1 basil leaves
- 1/2 cup pipe rigate pasta
- Saute celery and chopped garlic in oil.
- Add tomatoes, stock, red pepper flakes, marinated peppers with 1 TBL of juice, chicken, sausage and tomato paste.
- Bring to simmer and simmer for 20 minutes on low.
- Add beans and pasta.
- Simmer for 9 minutes.
- Add pesto and kale.
- Turn off heat and allow to sit 5 minutes.
- Serve in a bowl.
- Top with zest, torn basil and parm.
