White Cheddar-Chive Pimento Cheese

  1. Grate half of the cheese on the large holes of the grater.
  2. Grate remaining cheese on the small holes of box grater.
  3. Stir together the mayonnaise and next 6 ingredients.
  4. Mix the cheese in mayo mixture until well blended.
  5. Let stand 15 minutes.
  6. Cover and let chill.
  7. Can be stored tightly covered for up to 3 days.
  8. Great as a sandwich, dip or toasted bread as appetizers.
