T. T.'S Diablo Chili Recipe
- 2 lbs. hamburger
- 4 (11 ounce.) S & W cans kidney beans (save the juice)
- 1 (15 ounce.) can tomato sauce
- 6 lg. tomatoes, blanched, peeled and minced
- 2 med. onions, minced
- 1 jalapeno pepper, seeded and minced
- 6 cloves garlic, minced
- 1 each green and red bell peppers, seeded and minced
- 2 lg. stalks celery, minced
- 2 teaspoon cumin
- 6 tbsp. chili pwdr
- 1 teaspoon oregano
- 1 teaspoon sugar
- 1 tbsp. dry mustard
- Salt and pepper to taste
- Brown and drain hamburger, brown on high heat till the meat crackles.
- Saute/fry all peppers, onion, celery, garlic till translucent/soft.
- Mix the remaining ingredients in a large pot and bring to boil.
- Reduce heat and simmer 2 hrs.
- Adjust seasonings if necessary and simmer 2 more hrs.
- Stir the pot often, this scorches easily.
- Up to 4 c. of water may be added if more broth is desired.
- This recipe makes 2 gallons and freezes well.
- It is a lot of work, but worth the effort for a "warm/tasty" chili.
- Serve with a robust garlic/cheese bread.
