T. T.'S Diablo Chili Recipe

  1. Brown and drain hamburger, brown on high heat till the meat crackles.
  2. Saute/fry all peppers, onion, celery, garlic till translucent/soft.
  3. Mix the remaining ingredients in a large pot and bring to boil.
  4. Reduce heat and simmer 2 hrs.
  5. Adjust seasonings if necessary and simmer 2 more hrs.
  6. Stir the pot often, this scorches easily.
  7. Up to 4 c. of water may be added if more broth is desired.
  8. This recipe makes 2 gallons and freezes well.
  9. It is a lot of work, but worth the effort for a "warm/tasty" chili.
  10. Serve with a robust garlic/cheese bread.
