Pineapple Pepper Salad
- 5 large green peppers
- 3 Philadelphia cream cheese
- 2 Tbsp. gran. gelatine
- 1/4 c. cold water
- 1 Tbsp. lemon juice
- 1/2 tsp. salt
- 1/3 tsp. paprika
- 1 c. whipped cream
- 25 slices canned pineapple
- 3 heads lettuce or 2 large ones
- 3 eggs, beaten
- 1/3 c. sugar
- 3 Tbsp. flour
- 1/2 tsp. salt
- 1/2 c. pineapple juice
- 1/3 c. lemon juice
- 1/2 c. hot water
- 2 Tbsp. vinegar
- 1 c. whipped cream
- Beat eggs in upper part of double boiler.
- Add sugar, flour and salt, blended together.
- Stir well, then add juices, water and vinegar.
- Place over heat and stir until thick and creamy.
- Chill and when ready to serve, add whipped cream.
