Curried Shrimp With Dried Tomatoes

  1. Start the rice early enough to finish with the curried shrimp.
  2. In a LARGE skillet, melt the butter over medium heat.
  3. Saute garlic, green onions, and curry powder for 5 minutes.
  4. Add heavy cream, wine, sun dried tomatoes, and raisins.
  5. Simmer for 20 minutes.
  6. Add shrimp and simmer for 5-7 minutes until warm.
  7. Serve in bowls over rice.
