Lori's Sweet Potato Bread
- 3 teaspoons yeast
- 1 cup warm water
- 1 teaspoon sugar
- 1 12 tablespoons honey
- 1 teaspoon salt
- 2 eggs (beaten)
- 2 tablespoons canola oil
- 1 cup nonfat dry milk powder
- 1 cup sweet potato flour
- 1 cup whole wheat flour
- all-purpose flour
- In a bowl combine the yeast, water and sugar.
- Let stand until foamy.
- Add the honey, salt, eggs and canola oil.
- Mix well.
- Add the milk powder, sweet potato flour and the wheat flour.
- Mix well.
- Add enough white flour to bind.
- Turn out onto a floured surface.
- Knead until smooth and elastic.
- Place in an oiled bowl.
- cover.
- Let rise in a warm place for 2 hours.
- Punch down.
- Shape into a ball.
- cover.
- Let rise 1 hour.
- Heat oven (with a baking stone if you've got one) to 450.
- Let stone heat 30 minutes.
- Scatter cornmeal on stone.
- Cut an"x" on the top of the loaf.
- Place on stone.
- Lower oven temp to 350.
- Bake until golden and hollow sounding, anywhere from 35-60 minutes depending on your oven.
- Let cool on a rack.
- This is really tasty with honey butter!
