Delicious 7 Layer Dip
- 8 ounces, weight Sour Cream
- 1/2 envelopes (about 1 Oz. Packet) Taco Seasoning
- 16 ounces, weight Refried Beans
- 1/2 cups Salsa, Or More To Taste
- 3 whole Avocados
- Salt To Taste
- Lime Juice, To Taste
- 3 cups Shredded Mexican Fiesta Cheese
- 2 ounces, weight Alfalfa Sprouts
- 3 whole Roma Tomatoes, Cubed
- Chips, To Serve
- Season the sour cream with the taco seasoning, stirring well.
- Let it sit in the fridge for a while to allow the flavors to meld.
- Heat the refried beans to soften them (in a saucepan over low heat or in the microwave for a minute or two), stirring in your favorite salsa to make a softer, more dippable texture.
- Spread the bean mixture into a 9x13 Pyrex dish.
- Peel, pit, cube and mash avocados.
- Stir in salt and lime juice to taste.
- Spread this on top of the bean layer.
- Next, spread on the seasoned sour cream, followed by shredded cheese, alfalfa sprouts, then Roma tomatoes on top.
- This can be served immediately or covered and refrigerated for the next day.
- Serve with your favorite chip.
- This is sooo flavorful, healthy and good!
- I was hesitant to do the sprouts on top, but seriously, you have to try it!
- They are really good and taste a bit like lettuce, I think.
