Fish Fillets With Lemon and Capers
- 3 tablespoons olive oil
- 1 garlic clove, chopped
- 5 tablespoons butter
- 12 cup breadcrumbs
- 4 large flounder fillets (1-1/2 pounds)
- salt
- pepper
- 1 lemon, Juice of
- 2 tablespoons capers
- 2 tablespoons dill or 2 tablespoons parsley, chopped
- Saute garlic and bread crumbs in oil for 7 minutes or until browned.
- Set aside.
- Season fish with salt and pepper.
- Saute in butter for 4 minutes per side.
- Add lemon juice and capers.
- Saute for 1 minute.
- Add dill or parsley and saute for 30 seconds.
- Serve sprinkled with the bread crumbs.
