Mini Caprese Salad with Heirloom Tomatoes
- Mini Heirloom Tomatoes
- Mini Mozzarella Balls (preferably marinated)
- Fresh Basil
- Salt and Pepper
- Rinse the tomatoes.
- Slice about 10 (or how ever many you want on your salad) of them in half, try to get as many different colors as possible.
- Put them in a mixing bowl and set aside.
- On the plate, arrange 5 of the mozzarella balls in the center.
- Put 2 teaspoons of the oil from the marinated mozzarella onto the sliced tomatoes.
- Get a small handful of basil and chop it.
- Add it to the tomatoes.
- Add a pinch of salt and a pinch of pepper and mix together.
- Put the tomatoes on the plate around the mozzarella balls.
- Some of the basil will stick to the bowl, so scrape it out and put some on each of the mozzarella balls.
- Enjoy!
- PS I know what you're thinking, "it's not a caprese!
- There's no balsamic vinegar reduction!"
- And you are right.
- But I ran out of balsamic last week and forgot to pick up more.
- This was great without it and would be even better with it!
- *If you don't have marinated mozzarella balls, you can marinate them yourself in olive oil and dried Italian spices.
