Monday Afternoon Beans
- 8 ounces, weight Penne Pasta
- 1 jar Prepared Pesto Sauce (8 Oz Jar)
- 1 whole Medium Onion, Minced
- 4 cloves Garlic, Minced
- 2 cans Northern Beans (15 Oz Cans), Drained And Rinsed
- 1 cup Vegetable Broth
- Salt And Pepper, to taste
- Parmesan Cheese, If Desired

- Cook pasta according to package instructions then drain it and set aside.
- 2.
- While pasta cooks, pour the oil from the pesto jar (should be about 2 tablespoons) into a saute pan.
- Heat over medium heat.
- Once oil is heated add onions and garlic and saute until onions are transparent.
- 3.
- Add beans, vegetable broth, and pesto and heat through (about 5 minutes).
- 4.
- Add salt and pepper to taste.
- 5.
- Mix in pasta and serve with Parmesan cheese if desired.
