Chipotle-Rubbed Shrimp Salad
- 4 limes
- 1 small chipotle chile (packed in adobo sauce)
- 1 tbsp. brown sugar
- 1 1/2 lb. shelled and deveined large shrimp
- 2 medium peaches
- 1 mango
- 1 green onion
- 1/4 c. fresh cilantro leaves
- 1/4 tsp. salt
- 1 bag baby spinach
- From limes, grate 1 teaspoon peel and squeeze 6 tablespoons juice.
- In medium bowl, combine 2 tablespoons lime juice with grated peel, chipotle chile, and sugar.
- Add shrimp; toss well to coat.
- In large bowl, combine peaches, mango, green onion, cilantro, 1/4 teaspoon salt, and remaining 4 tablespoons lime juice.
- Set peach mixture aside.
- In 12-inch nonstick skillet, cook shrimp and chipotle mixture on medium 8 to 10 minutes or until shrimp turn opaque throughout, stirring occasionally.
- Add spinach to peach mixture along with shrimp and any liquid from skillet; toss to combine.
