Chipotle-Rubbed Shrimp Salad

  1. From limes, grate 1 teaspoon peel and squeeze 6 tablespoons juice.
  2. In medium bowl, combine 2 tablespoons lime juice with grated peel, chipotle chile, and sugar.
  3. Add shrimp; toss well to coat.
  4. In large bowl, combine peaches, mango, green onion, cilantro, 1/4 teaspoon salt, and remaining 4 tablespoons lime juice.
  5. Set peach mixture aside.
  6. In 12-inch nonstick skillet, cook shrimp and chipotle mixture on medium 8 to 10 minutes or until shrimp turn opaque throughout, stirring occasionally.
  7. Add spinach to peach mixture along with shrimp and any liquid from skillet; toss to combine.
