Fried Flour Tortilla Chips
- 4 cups Vegetable Or Peanut Oil, More If Needed
- 8 whole Small Round Flour Tortillas Of Your Choice, Cut In Small Wedges Of Eighths
- 1 teaspoon Sea Or Kosher Salt, More To Taste
- Fill a large, heavy duty frying pan (the larger the diamater the better) with about 2 inches of the oil of your choice.
- Heat oil to 350-375 degrees F.
- Separate the flour tortilla wedges before frying.
- Fry tortillas in small batches, about 45 seconds on each side, turning once or twice.
- Using a slotted spoon or a spider skimmer, take fried chips out of hot oil and immediately sprinkle with salt and drain chips on a wire rack or a paper towel-lined sheet pan.
- Let cool and serve with your favorite dip.
