Fried Flour Tortilla Chips

  1. Fill a large, heavy duty frying pan (the larger the diamater the better) with about 2 inches of the oil of your choice.
  2. Heat oil to 350-375 degrees F.
  3. Separate the flour tortilla wedges before frying.
  4. Fry tortillas in small batches, about 45 seconds on each side, turning once or twice.
  5. Using a slotted spoon or a spider skimmer, take fried chips out of hot oil and immediately sprinkle with salt and drain chips on a wire rack or a paper towel-lined sheet pan.
  6. Let cool and serve with your favorite dip.
