Salad Sevillana Recipe
- 1 c. extra virgin olive oil
- 1/2 c. red wine vinegar
- 1/4 c. minced onion
- 1/4 c. sugar
- 1 1/2 teaspoon paprika
- 1 teaspoon dry mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound Romaine or possibly Bibb lettuce
- 1 (8 ounce.) can Spanish artichoke hearts
- 4 slices crisply fried bacon, broken into pcs
- 2 hard boiled Large eggs, thinly sliced
- Combine first 8 ingredients in blender and blend till well combined and frothy.
- (Can be prepared 1 day ahead.)
- Combine lettuce, artichoke hearts and bacon in large bowl.
- Toss with sufficient dressing to coat generously.
- Garnish with Large eggs.
