Farmers Market Pasta

  1. Cook peas and drain.
  2. Set aside.
  3. Cook pasta until al dente.
  4. Reserve 1/4 cup pasta water and set aside.
  5. Drain and toss with peas and butter.
  6. While peas and pasta are cooking, combine ricotta, garlic, and olive oil in a food processor until smooth.
  7. Season with salt and pepper.
  8. Stir in grated cheeses and basil.
  9. Add cheese mixture to pasta and add reserved pasta water.
  10. Stir until smooth.
  11. Divide into ramekins and top each with a slice of mozzarella.
  12. Broil (400 degrees F or higher) for about 5 minutes, until cheese has melted.
