Almond Paste
- 2 cups blanched almonds
- 1 egg white
- 1 12 cups icing sugar
- 2 teaspoons lemon juice
- Chop almonds VERY fine.
- Add 1 egg white gradually, then 1 cup icing sugar and lemon juice.

- Knead with more icing sugar until a soft dough is formed.
- Roll out to desired shape, about 1/4 inch thick, and top fruitcakes.
