Almond Paste

  1. Chop almonds VERY fine.
  2. Add 1 egg white gradually, then 1 cup icing sugar and lemon juice.
  3. K.
  4. Knead with more icing sugar until a soft dough is formed.
  5. Roll out to desired shape, about 1/4 inch thick, and top fruitcakes.
