Avocado-Tomatillo Salsa

  1. In large bowl, combine avocados, bell peppers, scallion and half of the tomatillos.
  2. Stir to mix.
  3. In blender or food processor, place remaining tomatillos.
  4. Add garlic, cilantro, chiles and lime juice.
  5. Process until mixture is smooth.
  6. With motor running, drizzle in oil until well blended.
  7. Add puree to vegetables in bowl and mix thoroughly.
  8. Season with salt.
  9. Let sit at least 30 minutes before serving.
