Simple Veggie Burger
- 2 tablespoons extra virgin olive oil
- 2 tablespoons extra virgin olive oil
- 1 (8 ounce) bagpre-washed spinach
- 2 eggs
- 1 (15 ounce) can chickpeas, drained and rinsed
- 1 small carrot, grated
- 12 cup wheat bran
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley flakes
- 12 teaspoon paprika
- Heat 2 tbsp oil in a nonstick skillet on medium-low.
- Add spinach and saute, turning frequently, until wilted.
- Put spinach onto a plate to cool.
- Add chick peas, eggs, and seasonings to a food processor and pulse until combined.
- Add cooled spinach and process until spinach is incorporated.
- Pour mixture into a mixing bowl, then add carrot and wheat bran and stir to combine.
- Shape mixture into 4 patties - they will be very mushy, but they will crisp up when cooking.
- Heat 2 tbsp oil (or canola spray) on medium-high in a nonstick skillet.
- Add patties and cook about 5 minutes per side.
- Serve on a bun with a little ranch dressing, or however you like!
