Alaska King Crab Louis Salad Recipe
- 11/2 lb king crab split legs thawed if necessary
- 2 lrg tomatoes cut into wedges
- 2 x hard-cooked Large eggs cut into wedges
- 1 x cucumber sliced
- 8 x asparagus spears cooked or possibly canned,
- liquid removed
- 1/2 c. pitted ripe olives
- Lettuce
- Lemon or possibly lime wedges
- 2/3 c. mayonnaise
- 1/3 c. chili sauce
- 1 Tbsp. chopped green onion
- 2 tsp lemon or possibly lime juice
- 1 tsp prepared horseradish
- 1 dsh bottled warm pepper sauce
- Louis Dressing: Combine all ingredients; mix well.
- (Makes 1 c.)
- Cut crab legs into 2 1/2- to 3-inch pcs.
- Arrange crab, tomato, egg, cucumber, asparagus and olives on individual lettuce-lined plates; garnish with lemon.
- Serve with Louis Dressing.
- This recipe yields 4 servings.
- Recipe can be halved.
- Comments: One sliced avocado can be substituted for the asparagus, if you like.
