Floured Shrimp and Rapini
- Eggs
- Jumbo shrimp (peeled, deveined and uncooked)
- Flour
- Bread crumbs
- Olive oil
- Rapini
- Beat the eggs.
- Dip shrimp in the following order: first flour, then egg and finally bread crumbs.
- Heat olive oil in a frying pan.
- Fry shrimp for 1 1/2 minutes on each side.
- Heat oil in another saucepan and add chopped garlic.
- Cook until golden brown.
- Add rapini and cook for 5 to 7 minutes.
- Rapini should be a dark green.
- Serve with shrimp.
