Floured Shrimp and Rapini

  1. Beat the eggs.
  2. Dip shrimp in the following order: first flour, then egg and finally bread crumbs.
  3. Heat olive oil in a frying pan.
  4. Fry shrimp for 1 1/2 minutes on each side.
  5. Heat oil in another saucepan and add chopped garlic.
  6. Cook until golden brown.
  7. Add rapini and cook for 5 to 7 minutes.
  8. Rapini should be a dark green.
  9. Serve with shrimp.
