Chipotle Raisin Sauce

  1. Place raisins in a pot.
  2. Add just enough cold water to cover the raisins about 1/2 inch.
  3. Over high heat, bring the raisins to a boil.
  4. Once boiling reduce the heat to medium and simmer for 10 to 15 minutes until the raisins are plump.
  5. Strain the raisins, discarding the water and place in a food processor.
  6. To the raisins add chipolte peppers, adobo sauce, cilantro, water, lime juice, lime zest, cumin and salt.
  7. Pulse for 1 to 2 minutes until the the mixture is smooth.
  8. If the consistency seems overly thick add a small amount of water.
  9. This will keep in the refrigerator for up to 4 days in an air-tight container.
