Easy Vegetable Pizza

  1. COOK onion in oil until softened.
  2. Add garlic, vegetables, tomatoes, dried herbs and seasonings.
  3. Cook and stir over medium heat for 10 minutes or until vegetables are softened.
  4. Arrange graham wafers in a single layer on baking sheet.
  5. Top with an even layer of vegetable mixture.
  6. Sprinkle grated cheese on top.
  7. Bake at 425F (220C) in oven for 10 minutes or until cheese melts and is bubbling.
  8. Allow to cool for a few minutes before serving.
