Curried Prawn Noodle Soup
- 1 (9 ounce) konjac, drained and rinsed (Angel Hair)
- 15 (300 g) prawns, washed and raw
- 2 cups roma tomatoes, washed and diced
- 2 teaspoons curry powder
- 2 teaspoons ground cinnamon
- 1 teaspoon paprika
- 2 tablespoons stevia powder
- 12 teaspoon ground cayenne pepper
- 4 tablespoons fresh garlic, chopped
- 12 cup lime, sliced into wedges
- 1 cup cilantro, fresh
- 12 cup sweet basil, fresh
- 12 cup water
- 12 teaspoon olive oil flavored cooking spray, organic
- Combine garlic, cayenne, curry powder and paprika in pot sprayed with olive oil spray, cooking on medium high heat.
- After ingredients are well mixed and sizzling for about 2 minutes add Prawns (Shrimp).
- After cooking about 5 minutes or until Prawns change color.
- Remove Prawns and set aside, then add the rinsed Shiratake noodles and tomatoes, and cook another 5 minutes adding water as you stir.
- Add cinnamon, Stevia Powder and Fat Free Chicken Broth and allow to simmer for about 10 minutes before serving.
- Add 5 Prawns in each bowl when serving.
- Enjoy and garnish with fresh sweet basil, cilantro and a lime wedge.
