Grilled Pork Loin with Pineapple Salsa

  1. Roast: Preheat barbecue, both burners on high heat with the lid down.
  2. Combine coating mix and spices in large plastic bag (grocery bag works well).
  3. Coat pork in lime juice.
  4. Shake in bag with coating/spice mixture, until completely covered.
  5. Place on disposable aluminium BBQ pan or tin foil that has been poked with holes.
  6. Turn off one burner of the barbecue and place roast on foil on that side.
  7. Close barbecue lid.
  8. Grill over indirect heat for 1 to 1-1/4 hours or until done.
  9. (Pork is done when it reaches 160F on a meat thermometer).
  10. Salsa: Mix all ingredients until well blended.
  11. Cover and refrigerate until ready to serve.
