Mom's Baked Rice w/butter & onions

  1. Preheat oven to 375
  2. Saute onion & butter until it is translucent add to 9x13 baking dish (love my pyrex)
  3. Add 1 cup long grain white rice.
  4. Stir in 2 cups of boiling chicken broth
  5. Cover & bake for 18 minutes
  6. After taking out of oven, gently stir in 4 tbs of melted butter with fork.
