Mom's Baked Rice w/butter & onions
- 1/2 cup onion, chopped
- 1/4 cup butter
- 1 cup long grain white rice
- 2 cup chicken broth
- 4 tbsp melted butter (added after baking)
- Preheat oven to 375
- Saute onion & butter until it is translucent add to 9x13 baking dish (love my pyrex)
- Add 1 cup long grain white rice.
- Stir in 2 cups of boiling chicken broth
- Cover & bake for 18 minutes
- After taking out of oven, gently stir in 4 tbs of melted butter with fork.
