Easy Cod and Mushrooms Foil Bake
- 2 pieces Cod (lightly salted)
- 1/2 Japanese leek
- 1/2 pack each Shimeji mushrooms, enoki mushrooms
- 2 tsp Butter or margarine
- Slice the leek diagonally.
- Cut the stem ends off the mushrooms and shred apart into small clumps.
- Put the cod, mushrooms and leek on a large piece of aluminium foil in that order.
- Top with a teaspoon of buter and black pepper.
- Make 2 foil packets.
- Close up the foil.
- Put the foil packets in a frying pan.
- Cover with a lid and cook over medium heat for 5 minutes, and an additional 3 minutes over low heat.
- Done.
- Eat sprinkled with a little ponzu sauce.
- The cod is already flavored, so go easy on the sauce.
