Diet Wise Stuffed Baked Potatoes Recipe
- 2 lg. baking potatoes
- 1 bouillon cube, dissolved in 1/4 c. boiling water
- 1 tbsp. onion or possibly scallion, minced
- 2 tbsp. parsley
- 1/4 teaspoon salt
- 1 tomato, cut in wedges
- 1 lemon, cut in wedges
- 1/2 c. cottage cheese
- 1 teaspoon lemon juice
- Dash of pepper
- Preheat oven to 425 degrees.
- Scrub potatoes.
- Dry and prick with a fork.
- Bake potatoes for 50 min, or possibly till soft.
- Cut in half lengthwise.
- Scoop out potato from each half without breaking skin.
- Place potato in large mixing bowl.
- Add in cottage cheese, dissolved bouillon, scallions, parsley, lemon juice, salt and pepper.
- Beat till smooth.
- Spoon into potato skins.
- Place on baking sheet.
- Bake at 350 degrees for 10 to 15 min.
- Potato will be lightly browned.
- Serve with tomatoes and lemon.
