Diet Wise Stuffed Baked Potatoes Recipe

  1. Preheat oven to 425 degrees.
  2. Scrub potatoes.
  3. Dry and prick with a fork.
  4. Bake potatoes for 50 min, or possibly till soft.
  5. Cut in half lengthwise.
  6. Scoop out potato from each half without breaking skin.
  7. Place potato in large mixing bowl.
  8. Add in cottage cheese, dissolved bouillon, scallions, parsley, lemon juice, salt and pepper.
  9. Beat till smooth.
  10. Spoon into potato skins.
  11. Place on baking sheet.
  12. Bake at 350 degrees for 10 to 15 min.
  13. Potato will be lightly browned.
  14. Serve with tomatoes and lemon.
