Black Bean and Corn Wraps

  1. Place chopped vegatbles in bowl and add the first teaspoon of lime juice.
  2. Let it sit for 5-10 minute.
  3. Preheat oven or toaster oven to 350.
  4. Heat frying pan with oil or spray.
  5. Add Zucchinni, Onion, Peppers, and Garlic.
  6. cook for 5-7 minute.
  7. Add Cumin.
  8. Cook for another 3-5 minute.
  9. In a bowl mash the black beans.
  10. Add corn and cooked vegetables.
  11. Spread the filling on a tortilla, top with desired amount of cheese, roll up.
  12. Heat in oven for about 12 min or until slightly crispy.
  13. Enjoy!
  14. Also good with a little low fat sour cream.
