Shredded Chicken Coleslaw Spuds

  1. Prick the potatoes with a fork and place on a baking tray.
  2. Brush lightly with oil and bake at 220C for 1 hour, or until cooked through.
  3. Toss together ingredients for the coleslaw until well combined.
  4. Cut a deep cross in the top of the potato and fill with the coleslaw.
  5. Serve.
