Shredded Chicken Coleslaw Spuds
- 4 large potatoes Safeway 2 pkg For $5.00 thru 02/09
- 1 tablespoon oil
- Shredded Chicken Coleslaw
- 2 skinless chicken breast fillets, cooked and shredded
- 1 cup finely shredded red cabbage
- 1 cup finely shredded green cabbage
- 1/3 cup KRAFT Coleslaw Dressing
- 4 spring onions, sliced
- 1 small carrot, grated
- 2 teaspoons minced ginger
- Prick the potatoes with a fork and place on a baking tray.
- Brush lightly with oil and bake at 220C for 1 hour, or until cooked through.
- Toss together ingredients for the coleslaw until well combined.
- Cut a deep cross in the top of the potato and fill with the coleslaw.
- Serve.
