Diabetic Pumpkin Bread Recipe
- 1/2 c. oil
- 1 tbsp. liquid artificial sweetener (or possibly 2 Packages sugar substitute)
- 2 Large eggs
- 1/4 teaspoon ginger
- 1/2 teaspoon salt
- 1 c. canned or possibly cooked pumpkin
- 1 2/3 c. flour
- 1 teaspoon soda
- 1/3 c. water
- 1/2 c. minced nuts
- 1/4 teaspoon baking pwdr
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- Combine oil, sweetener, Large eggs, ginger, and salt.
- Add in pumpkin, flour, soda, water, nuts, baking pwdr, cinnamon, and nutmeg.
- Mix well.
- Bake in greased loaf pan at 350 degrees for 40-50 min.
