Cream Puffs

  1. In a large saucepan, bring the water, butter and salt to a boil over medium heat.
  2. Add flour all at once and stir until a smooth ball forms.
  3. Remove from the heat; let stand for 5 minutes.
  4. Add eggs, one at a time, beating well after each addition.
  5. Continue beating until mixture is smooth and shiny.
  6. Drop by 1/4 cupfuls 3 inches apart onto greased baking sheets.
  7. Combine milk and egg yolk; brush over puffs.
  8. Bake at 400 for 30-35 minutes or until golden brown.
  9. Remove to wire racks.
  10. Immediately cut a slit in each for steam to escape; cool.
  11. Fill the cream puffs with pudding just before serving.
  12. Dust with confectioner's sugar.
  13. Refrigerate leftovers.
