Roasted Squash

  1. In a large pot, heat the oil.
  2. Add the cloves, star anise pods, dried chipotle chiles, rosemary sprigs and ginger, and cook 2 minutes, stirring.
  3. Stir in the winter squash and roast at 375 until tender, about 30 minutes.
  4. Discard the cloves, anise, chiles and rosemary.
  5. Season with honey, lime, salt and pepper.
