Roasted Squash
- 1/4 cup oil
- 4 cloves
- 2 star anise pods
- 2 dried chipotle chiles
- 2 rosemary sprigs
- 1/2 cup chopped fresh ginger
- 10 cups 1-inch-cubed peeled winter squash
- Honey, lime, salt and freshly ground pepper, for seasoning
- In a large pot, heat the oil.
- Add the cloves, star anise pods, dried chipotle chiles, rosemary sprigs and ginger, and cook 2 minutes, stirring.
- Stir in the winter squash and roast at 375 until tender, about 30 minutes.
- Discard the cloves, anise, chiles and rosemary.
- Season with honey, lime, salt and pepper.
