Orange Basil Black Beans
- 2 1/2 cups black beans cooked
- 2 each scallions, spring or green onions thinly sliced diagonal
- 1 cup cucumbers seedless, peeled and diced
- 1 cup italian plum (roma) tomatoes seeded and diced
- 1 cup celery thinly halved, lengthwise
- 6 tablespoons olive oil, extra-virgin
- 4 tablespoons lemon juice fresh
- 4 tablespoons basil finely slivered
- 2 teaspoons orange zest finely grated
- 1 x salt and black pepper to taste
- Combine all ingredients in a bowl; toss gently.
- Let rest, covered, at room temperature for at least 1 hour before serving.
