Apricot Pork Medallions Recipe

  1. Flatten medallions slightly.
  2. Heat 1 Tbsp.
  3. of butter over Medium-High heat in a skillet.
  4. Saute/fry pork about 2 min on each side.
  5. Remove from pan.
  6. To juice, add in 1 teaspoon buitter, apricot jam, green onions, mustard and cider vinegar.
  7. Cover and simmer for 3-4 min.
  8. Add in prok to heat through.
  9. Serve with buttered noodles.
  10. and green salad.
