Apricot Pork Medallions Recipe
- 1 lb Pork tenderloin medallions, cut 1 " thick
- 1 Tbsp. Butter, plus
- 1 tsp Butter
- 1/2 c. Apricot jam
- 2 x Green onions, sliced
- 1/4 tsp Dry mustard
- 1 Tbsp. Cider vinegar Buttered noodles
- Flatten medallions slightly.
- Heat 1 Tbsp.
- of butter over Medium-High heat in a skillet.
- Saute/fry pork about 2 min on each side.
- Remove from pan.
- To juice, add in 1 teaspoon buitter, apricot jam, green onions, mustard and cider vinegar.
- Cover and simmer for 3-4 min.
- Add in prok to heat through.
- Serve with buttered noodles.
- and green salad.
