South Indian Spiced Chickpeas Recipe

  1. Heat vegetable oil, add onions, and fry until light brown.
  2. Add garlic and ginger, and fry for 2 minutes, stirring.
  3. Stir in ground coriander, ground cardamom, and amchur.
  4. Stir-fry for 2 minutes or until fragrant.
  5. Add tomato, chickpeas with their liquid, and salt and pepper to taste.
  6. Cook 10 minutes longer or until thickened.
  7. Serve garnished with thinly sliced red onion and minced green chile.
